It’s relatively simple for a holiday dish, yet tastes like you’ve spent a bunch of time on it because the ingredients are super flavorful. Between the rich dijon mustard, umami shiitake mushrooms, and herbaceous dill, you are in for a treat with this perfect holiday side dish. See below for this holiday-esque recipe.

A perfect holiday classic that is super tasty, healthy, and fun to eat as a side to your family feast or is a perfect meal for one! Packed with veggies and plenty of flavor, this side won’t disappoint!

Ingredients

  • 2 tbsp olive oil

  • 1 lb green beans (ends peeled)

  • 8 oz shiitake mushrooms (sliced)

  • 4 cloves garlic (minced)

  • 2 stalks green onions (diced)

  • 2 tsp rosemary

  • 1 tsp red pepper flakes (I usually add more, but start with this.)

  • salt/pepper to taste

  • 2 tsp smoked paprika

  • 2 tbsp tamari (soy sauce is fine)

  • 1 tbsp white wine vinegar

  • 2 tbsp dijon mustard

  • 2 tbsp bread crumbs (Italian style or Panko)

Directions

  • Chop the ends of your green beans, slice your mushrooms, dice your garlic and green onion.
  • In a deep medium wok or pan on medium-high heat, heat up your olive oil. When the oil is ready, add your green beans and let it sizzle. Let them sauté for at least 5-7 minutes on each side. Add more oil if the beans get dry.
  • When they are slightly charred, add your mushrooms and garlic, and sauté for 3-4 more minutes. Then add your salt/pepper, paprika, and rosemary.
  • Lower the heat and add your tamari, white wine vinegar, and Dijon mustard. Sauté for 5 more minutes and if your beans need more sauce, add more of the above sauces.
  • In a separate small pan, heat up your breadcrumbs using a hint of olive oil and toast them for about 3-5 minutes.
  • Throw in half of your dill and green onions to your green beans and sauté lightly for about 1-2 minutes.
  • Sprinkle your green beans with bread crumbs, garnish with the remaining dill and green onions. Your green beans are now ready to be consumed!

Notes

  • For more spice, add more red pepper flakes and try it with some Hungarian paprika!
  • For more acid, add more white wine vinegar and dijon mustard.
  • For more umami, add more tamari/soy sauce.
  • If your green beans are dry, add more olive oil or some soy butter.
