You know I love my noodles and had these fresh noodles from H-Mart enticing me in my fridge so I had to make something with them! This recipe is relatively easy and it has plenty of vegetables so it’s healthy-ish too! I just decided to put together what I had in my fridge and pantry and it came out swimmingly. Crumbled Tofu Noodles Recipe

Ingredients
- Tofu
firm tofu
szechuan peppercorn powder or ground up peppercorm
- Noodles and Veggies
grapeseed oil
noodles (rice or egg)
oyster mushrooms, sliced
poblano pepper, diced
stalks green onion, diced
pickled mustard greens
garlic, minced
ttbsp ginger, minced
fermented black beans
- Sauce
soy sauce
rice vinegar
vegan stirfry sauce/vegan oyster mushroom sauce
sesame oil
chili crisp for garnish
Directions
- Drain tofu and add veggies.
- In a small bowl, mix soy sauce, rice vinegar, oyster mushroom sauce, and sesame oil together. Crumble the drained tofu on a plate or a bowl and sprinkle Szechuan peppercorn powder on it.
- Boil water for the noodles and follow the noodle directions.
- Heat up the wok with oil on high heat, then add pepper and mushrooms – sauté for about 5 minutes till they brown. Then add the garlic and ginger and sauté for an additional minute.
- Add the water chestnuts and pickled mustard greens and sauté for an additional minute. Then add the tofu to the veggie mixture, mix together with the veggies and add half of the sauce – lower your heat to medium. Sauté everything together for about 5 minutes.
- Add half of the noodles and the rest of the sauce. Mix everything together, make sure the sauce is evenly distributed. Then add the rest of the noodles – add more sauce if needed (just mix the sauce ingredients together in a small bowl and then add to the wok).
- Sauté everything for an additional 3 minutes. Turn off the heat, garnish with green onions.

- Want it saucier – double the sauce.
- Want it spicier – add sambal to your sauce.
