Soy Chorizo Tacos Recipe:
One of the foods I missed after becoming a vegetarian was chorizo because it’s super flavorful and has a great spice to it. But soy chorizo has saved my life and soy chorizo tacos are my favorite tacos to eat and make. Trader Joes has the best soy chorizo but there is also Cacique and Yves, which are also good. This soy chorizo tacos recipe is super versatile and makes a great filling for tacos, enchiladas, tostadas, etc. It’s also super easy and perfect for a Taco Tuesday weeknight when you’re tired from work but want to celebrate Taco Tuesday.

Best Soy Chorizo Tacos Recipe: Perfect for Taco Tuesday

Ingredients
Corn Tortillas (El Milagro is my favorite)
soy chorizo (Trader Joe’s is my favorite)
olive oil (grapeseed is fine too)
tomato paste
mushrooms (sliced)
golden onion (diced)
poblano pepper (sliced)
garlic (diced)
cilantro (garnish)
jalapeno (garnish)
dairy or vegan cheese (Follow Your Heart Cheddar is my favorite for vegan cheese) to taste
- Spices: I add more than this but start out with this amount.

red pepper
chili powder
Hungarian paprika
cumin
Tajin
Directions
- First, chop up all of your veggies.
- Then, in a medium frying pan on medium heat, heat up the oil. Add a tiny piece of the onion and once it starts sizzling it’s ready.
- Sauté your onion for about 3 minutes when it becomes translucent. Then add the pepper and the mushrooms, sauté for 3-4 minutes till there is a char on the pepper.
- Then, add the garlic and all of the spices. Season to taste. Stir everything for about 1 minute.
- Finally, add the soy chorizo and mix everything together for about 3-4 minutes making sure that the soy chorizo is also sautéing. I like spice so I add a bit more of the spices on the soy chorizo too. Add the tomato paste and 1/2 cup of water, stir, and bring to a simmer. Simmer for about 2 minutes.
- Turn off the stove, garnish with cilantro, jalapeños, vegan or dairy cheese and heat up your favorite corn tortillas!
Notes
- Want it spicier? Add more chili powder and red pepper flakes.
- Want your taco filling more moist? Add a little water.
- Simmered chipotle peppers add a wonderful flavor and hint of sauce to these tacos.
- These tacos are wonderful with Follow Your Heart vegan feta (a decent substitute for cotija).
