Jackfruit Fajitas Taco Recipe:

This recipe is perfect for a weeknight when you want something tasty and healthy but don’t have a lot of time. Upton’s and the Jackfruit Company also marinate their jackfruit ahead of time so you really don’t have to add that much flavor to them, but as someone who loves spicy, flavorful food, I still add many spices to fully bring out the flavor. You can easily eat these fajitas in a corn tortilla as a taco or just in a bowl by itself with some toppings. Either way it will be delicious.

Tasty Jackfruit Fajitas Taco Recipe

Jackfruit is such a pliable ingredient to cook with as it has textures similar to pork and can easily absorb flavors. These fajitas can go in a taco or be eaten in a bowl by itself. I also like how I don't feel super full after eating jackfruit even though it is satisfying. See the recipe below for some jackfruit fajitas!

Ingredients

  • 1 package Upton's Jackfruit or the Jackfruit company

Vegetables

  • 1/2 red onion (diced)
  • 1/2 lb mushrooms (sliced)
  • 1 poblano pepper (sliced)
  • 1 clove garlic (diced)
  • 2 tbsp olive oil

Spices

  • 2 tsp salt
  • 2 tsp black pepper
  • 2 tsp red pepper
  • 2 tsp cumin
  • 2 tsp paprika
  • 2 tsp chili powder
  • 2 tsp cayenne pepper

Toppings

  • 1 avocado (optional for slices or guacamole)
  • 2 tbsp vegan cheese of your choice (Follow Your Heart is great)
  • 3 tbsp cilantro (chopped)
  • 6 corn tortillas

Instructions

  • Chop the onion, mushrooms, pepper, garlic, and cilantro.
  • Heat up a medium frying pan and then add oil to it on medium-low heat.
  • Add the onions, let them sauté for about 2 minutes.
  • Then add the poblano pepper and mushrooms and sauté for 2 more minutes.  
  • Then add the garlic and stir for about 1 more minute.
  • Once the vegetables are properly sautéed, then add all of the spices, season to taste.
  • Sauté the jackfruit with the vegetables for about 7 minutes making sure that the jackfruit is tender and has absorbed the flavors.
  • Sprinkle some cilantro on top and your fajitas are ready for a tortilla or a bowl!

  • Vegetables:

    • 1 clove of garlic

Spices: I like my food spicier so I usually add more spice than this, but whatever works for your palette 🙂

Toppings:

  • 1 avocado (optional for slices or guacamole)
  • 3 tsp of chopped cilantro
  • Vegan cheese of your choice (Follow Your Heart Cheddar is my favorite) for sprinkling
  • 6 corn tortillas

Directions:

1. Chop the onion, mushrooms, pepper, garlic, and cilantro. I love using this kind of bamboo chopping board.
2. Heat up a medium frying pan and then add grapeseed or olive oil to it on medium-low heat.
3. Add the onions, let them sauté for about 2 minutes til the onion is golden.
4. Then add the poblano pepper, mushrooms and sauté for 2 more minutes.
5, Then add the garlic and stir for about 1 more minute. Once the vegetables are properly sautéed, add all of the spices, season to taste.
6. Sauté the jackfruit with the vegetables for about 7 minutes making sure that the jackfruit is tender and has absorbed the flavors.
7. Sprinkle some cilantro on top and your fajitas are ready for a tortilla or a bowl! You can put them on top of a tortilla with some avocado and vegan cheese. Enjoy your tasty fajitas!
