Vegan – check out my vegan Mexican Pizza Recipe!
We’re all sad that Taco Bell decided to stop serving their Mexican Pizza but you can easily make it at home! I used to get the Mexican Pizza without beef and just the refried beans at Taco Bell. But now I added some more vegetable fabulousness to this lovely classic because who doesn’t love spinach in their Mexican pizza?! See below for my Tasty Mexican Pizza Recipe. Vegan Mexican Pizza Recipe

minutesThis is a delicious, vegan twist on Taco Bell’s famous Mexican Pizza. It’s quick and easy to make during a busy weeknight!
Ingredients
- Beans
olive oil
2 cans refried beans
1/4 white onion (diced)
2 cloves garlic (minced)
1 small can jalapeños (diced)
cumin (I add 2 tsp)
cayenne (I add 2 tsp)
salt/pepper (to taste)
- Mexican Pizza
cooking spray
8 medium sized flour tortillas
red enchilada sauce
olive oil
fresh spinach
3 cloves garlic (minced)
chili powder
Tajin
1/2 white onion (minced)
vegan cheddar (dairy cheddar)
green olives (chopped)
2 stalks green onions
1 tomato (diced)
salt/pepper (to taste)
Directions
- Beans
- Preheat your oven to 500 F to broil.
- Chop all of your veggies. In a medium sized pot, heat your olive oil, then add your diced onion and sauté for 2 minutes on medium heat.
- Then add your garlic and spices, sauté for 1-2 minutes.
- Add your refried beans and simmer for at least 5 minutes, then add your pickled jalapeños. Season to taste.
- Mexican Pizza
- Get two baking sheets out and spray the cooking spray on both baking sheets. Place half of your tortillas on both baking sheets.
- Top your tortillas with the refried bean mixture, the minced raw onion, then the spinach/garlic mixture. Then top each pizza with the second tortilla.
- Spread a generous amount of enchilada sauce on each tortilla, then add your cheese, top with green olive slices, and put your pizzas in the oven.
- For vegan cheese, broil 4-6 minutes. For dairy cheese, just broil 3-4 minutes.
- After you take them out of the oven and they cool off for 5 minutes, top with your tomatoes and green onions.
Notes
- If you have a red or gold onion, these will work as well.
- For vegan cotija, I like using Follow Your Heart’s feta.
- If you want super hearty Mexican Pizzas, you can also sauté some soy chorizo or vegan beef crumbles.
- If you want more veggies, you can also add some sautéed mushrooms.
- Want more spice? Add more chili powder and jalapeños.
