I have no shame about being an avocado toast lover. What’s wrong with loving a healthy fat on a carb? Absolutely nothing. Avocado toast is so versatile – you can add as many or as little toppings as you’d like. You can have it vegan or add eggs to it – whatever floats your boat! Fancy Avocado Toast Recipe
A simple and delicious avocado toast recipe with as many or as little toppings as possible! You can keep it vegan or add an egg to it.
Servings: 4 people
Ingredients
Avocado Spread
- 2 avocados
- 1 lime
- 3 dashes hot sauce (Cholula is what I prefer)
- 1 quarter red onion (finely diced)
- 2 cloves garlic (minced)
- 1 serrano pepper (finely diced and optional)
- salt/pepper to taste
Toast toppings
- 2 cloves garlic (minced)
- 1/2 bag spinach
- 2 tsp olive oil
- 1/2 cup pickled onions (or shallots)
- 20 cherry tomatoes (chopped in half)
- 3 tbsp balsamic
- 2 tbsp dill (chopped)
- 4 slices bread
- drizzle of extra virgin olive oil (optional)
- drizzle of chili oil
- poached eggs (optional)
- 2 tsp white vinegar (for eggs)
Instructions
Avocado Spread
- Season to taste with salt and pepper. For more acid, use more lime juice. For more spice, add more hot sauce and peppers.
- Prepare your optional poached egg and start toasting your bread. Crack your eggs into individual bowls. Bring water to a boil in a saucepan, pour white vinegar and when it starts boiling, bring to a simmer.
- Take a large spoon with slits or holes and create a whirlpool, then quickly dump the egg in the middle of the whirlpool and cook for 90 seconds on medium-low heat. Then take the egg out with a large spoon, drain excess water and put aside on a plate. Repeat this step for each egg.
- Once your bread is toasted, spread your avocado mixture on the bread, then the spinach-garlic mixture, then top with your optional egg, pickled onions (you can buy them pickled or pickle them yourself - see note), dill, tomatoes, and drizzle with balsamic and optional extra virgin olive oil or chili oil.
- Your avocado toast is now ready!
Notes:
- Add more spice with hot sauce and red pepper flakes.
- To quickly pickle your onions, at least a half hour before preparing your avocado toast, add half of a sliced onion to a bowl with 1/2 cup of white vinegar, 1 tbsp of white sugar, and 1 tbsp of tamari or soy sauce. Stir it all together. These will last you two weeks! This was inspired by http://www.nightmarketla.com/!
- Feeling even fancier, add pesto to it! Put it directly on your bread and top with the avocado spread and other ingredients.
- Top with Trader Joe’s Everything but the Bagel seasoning for an extra crunch!
